Vegetable pulao is a very light and delicious dish that you can eat throughout the year but winter is the best time to make this because of so many fresh vegetables we have in winter season. You may serve the pulao with any raita and salad but my family loves to eat it with vegetable raita. So lets start this vegetable loaded recipe.

- 3 cups rice
- 2 cup potatoes (cubed)
- 2 cup cauliflower (cubed)
- 1 cup peas
- 1 cup carrots (cubed or sliced)
- 1 cup capsicum (cubed)
- 6-8 green chillies (cut in half)
- salt
- 1 medium onion ( thinly sliced)
- 1 tsp ginger garlic paste
- 1 tbsp cumin seeds
- 5-6 red whole chillies
- 6-8 black pepper
- 3-4 cloves
- 1 stick cinnamon
- 1 bay leaf
- chicken stock/ chicken cube (optional)
- 1/4 cup oil
Method:
- Heat oil and fry onion till light golden.
- Add ginger garlic paste, cook for a minute then add cumin seeds, black pepper corn, cloves, cinnamon, bay leaf, red whole chillies .
- Now add potatoes, peas, cauliflower and carrot, cook for a minute.
- Add chicken stock or chicken cubes with water or simply water, cook until vegetables are half done.
- Add soaked rice, capsicum, green chillies and salt and cook for few minutes on high flame, than close the lid and turn the flame to low and cook until rice is done.
- Serve with raita.
Vegetable Raita Recipe:
Ingredients:
- 1/2 kg yogurt
- salt
- 1 tsp red chilli powder
- 1 tsp cumin seeds (crushed)
- 1 medium onion
- 1 cucumber
- 1 tomato
- 1 carrot
- green chillies (optional)
- you can also add reddish
Method:
- Beat yogurt with salt, cumin seed and red chilli powder.
- Cut all the vegetables in thin julienne.
- Mix vegetable in yogurt.
