1-2 tsp chaat masala or sabzi masala of any brand and khatai powder or few drop of lemon (optional-not included in real recipe)
1/4 cup oil
Method:
Half the brinjals lengthwise, then make cuts inside also.
Mix all ingredients except oil and fill in the cuts.
Now pour oil in frying pan and place brinjals (skin side down) in pan.
Close the lid and cook on slow flame until brinjals get tender.
Turn the flame high for a minute to crisp the skin.
Now flip the brinjals to cook the other side for a minute and dish out.
You can also cut chillies in half and fill with same spices and fry with brinjals for 2 minutes. You can also add few drops of lemon in it.
