Sindhi Baingan Recipe | Eggplant Recipe


Ingredients:

  • 250 gms brinjal/eggplant
  • 1 tbsp crushed coriander
  • 1 tbsp crushed red chillies
  • 1 tsp red chilli powder
  • 1 tsp salt (or to taste)
  • 1-2 tsp chaat masala or sabzi masala of any brand and khatai powder or few drop of lemon (optional-not included in real recipe)
  • 1/4 cup oil

Method:

  • Half the brinjals lengthwise, then make cuts inside also.
  • Mix all ingredients except oil and fill in the cuts.
  • Now pour oil in frying pan and place brinjals (skin side down) in pan.
  • Close the lid and cook on slow flame until brinjals get tender.
  • Turn the flame high for a minute to crisp the skin.
  • Now flip the brinjals to cook the other side for a minute and dish out.
  • You can also cut chillies in half and fill with same spices and fry with brinjals for 2 minutes. You can also add few drops of lemon in it.
