Aalu Baingan Recipe | Brinjal and Potato Curry Recipe


Ingredients:

  • 1/2 kg brinjal
  • 1/2 kg onion
  • 250 gms potatoes
  • 1/2 tsp ginger garlic paste
  • 1/4 cup yogurt
  • salt to taste
  • 1 tbsp red chilli powder
  • 1 tbsp crushed red chillies
  • 1 tsp crushed cumin seeds
  • 2 tsp crushed coriander
  • 1 tsp crushed fennel seed (saunf)
  • 1/4 tsp turmeric
  • 2 tbsp tamarind pulp
  • 2 tbsp desiccated coconut
  • 2 tbsp white sesame seeds (safaid til)
  • 1/4 cup oil

Method:

  • Heat oil and fry onion until translucent. Add ginger garlic paste and cook for a minute.
  • Add brinjals, potatoes, yougurt and all spices. 
  • Cover and let it cook until brinjals and potatoes are tender.
  • Now add green chillies, tamarind pulp, coconut and sesame seeds, close the lid and cook for 5 minutes on low flame until oil comes up.
  • Serve with boiled rice.
