Chicken Karahi

Chicken Karahi is a very popular and common dish of Pakistani cuisine.  You may find it in menu cards of almost every restaurant of Pakistan and the best thing about it is that everyone loves it,  from villages to big cities,  from people who love 'desi food' to people who love variations in food,  everyone loves Karahi. And don't consider 'Karahi' as a single dish,  we already have many variations of it and we can still make many more types of this versatile dish to make it the way we want.  We can make 'karahi' with any meat, but chicken and mutton are commonly used and we can also add less or more spices to prepare it according to our taste buds. Here I am sharing a traditional chicken karahi recipe that you usually eat at restaurants but because I like karahi with more gravy so I made it that way. So here is the recipe :


Ingredients:

  • Chicken 1 kg
  • Tomatoes 250 gms
  • Yogurt 1cup
  • Ginger paste 2 tsp
  • Garlic paste 2 tsp
  • Crushed black pepper 1 tsp
  • Crushed red chillies 1 tbsp (or upto taste) 
  • Crushed coriander 2 tbsp
  • Crushed cumin seeds 1 tbsp
  • Oil 1 & 1/2 cup
  • Big green chillies 7-8 (cut in halves) 
  • Ginger for garnish
  • Coriander for garnish 

Method:

  • Heat oil in a wok,  add ginger garlic paste and chicken. Cook on high flame until chicken changes it's color.
  • Add tomatoes (tomato paste or puree can also be used instead of tomatoes). Cover the lid and cook on medium heat for 7-8 minutes.
  • Remove the lid of the wok,  add yogurt,  salt, crushed red chillies,  black pepper,  coriander and cumin.  Cook on high flame until oil separates. 
  • Add green chillies and cover the lid again. Let it cook for 2-3 minutes on very low flame. 
  • Dish out and garnish with ginger,  fresh coriander and green chillies.
