Qorma Recipe


Ingredients:

  • 1 kg chicken/mutton/beef
  • 2 big or 4 medium onions (thinly sliced)
  • 2 cups yogurt
  • 2 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tbsp cumin seeds
  • 2 tsp black pepper corns
  • 1 tsp cloves
  • 2 medium cinnamon sticks
  • 1 star anise (badiyan k phool)
  • 1 bay leaf
  • 2 black cardamoms
  • 4-5 green cardamom
  • 2-3 tsp salt (or to taste)
  • 1 & 1/2 tbsp red chilli powder(or to taste)
  • 4 tbsp coriander powder
  • 1 tsp kewra water
  • 1/4 tsp nutmeg and mace powder(jaifal javitri powder)
  • 1 cup oil

Method:

  • Take two bowls, in bowl one put bay leaf, green and black cardamoms, 1 cinnamon stick, 4-5 cloves, 6-7 black pepper corns and 1/2 tsp kewra water. In bowl two take cumin seeds, rest of the black peppers, clove, 1 cinnamon stick and star anise. Now add a little bit of water in both bowls to soak the spices.
  • Heat the oil and fry onion till golden brown. Take out onion and grind with bowl two soaked spices and little bit water, then add yogurt and grind again.
  • Now add ginger garlic paste in the same oil. Add chicken(or meat of your choice) and soaked spices of bowl one, cook for few minutes until meat changes its color, then add salt and red chilli powder, cook again.
  • Now add onion and yogurt paste in it, again cook and keep stirring on high flame.
  • Now add nutmeg and mace powder, add some water and close the lid. Cook until meat is tender.
  • Serve with naan, sheermal or taftan.
