Chicken Chilli Vegetable soup

Winter is the best time to enjoy hot and delicious food. But at the same time it is so hard to leave your blanket, getting up in a cold weather and going to the kitchen to cook food. So, here we have to tackle both our troubles. That's why I am going to share so many cozy recipes that are warm, healthy and nutritious and at the same time very easy to make, so you could enjoy delicious hot food and you wouldn't have to spend so much time in the kitchen. I will share more recipes in my upcoming posts.
Today's recipe is "Chicken and Vegetable soup", So lets start.





Chicken & Vegetable Soup:




Ingredients:

      Oil                                                 1 tbsp                     
      Garlic paste/powder                      1/2 tsp
      Ginger paste/powder                     1 tsp
      Chicken (boneless cubes)             1 cup
      Chicken powder/Stock                 1 tbsp
      Cabbage                                        1 cup
      Onion                                            1 cup
      Capsicum                                      1 cup
      Carrot                                            1 cup
      Green Chillies                               5-6 (cut in halves)
      Leek/Green onion                         1/4 cup
      Salt                                                as per taste
      Ground Black pepper                    as per taste
      Vinegar                                          1 tbsp
      Soy sauce                                       2 tbsp
      Cornflour                                       as per need(for thickness of soup)



Method:


  1. Slightly heat the oil in a pot and add ginger garlic paste and chicken. Fry a little.
  2. Add water and chicken powder, or you can use chicken stock as well. Bring it to boil.
  3. Add all the vegetables, salt, pepper, vinegar and soy sauce.
  4. When the vegetables are half done, add cornflour mixed in water. Keep stirring. Cook for one more minute. Add half green onion in the pot after you lit off the flame and another half when you dish out the soup.

You can have this soup with fried rice, green onion rice, garlic rice, or simply with plain rice.







You can serve the two sauces that I have shown below if you or your family like more spicy food.





This one is just green chillies in light soy sauce.




And this sauce is super hot and super easy to make. Just mix red pepper powder and a little bit salt in vinegar.
